From Army Field Rations to Artisan Jerky
"My journey with beef jerky began in 2001 while stationed at Fort Lewis, Washington, as an infantryman in the U.S. Army. Before heading out on field exercises, I would make my own beef jerky—it was the perfect high-protein, slightly salty, lightweight snack to pack along. In the infantry, we called these kinds of non-issued treats "pogey bait".
In 2004, I was wounded during deployment in Iraq. By 2006, I was medically retired from service. Since then, making beef jerky has become more than just a hobby—it’s been a therapeutic passion and a way to stay connected to those experiences.
Today, I pour my heart into every batch, using only quality red beef and focusing on bold, delicious flavors that honor the tradition of good, honest food.
